Chocolate Easter cake

Showstopper chocolate cake topped with Easter eggs

  • 125g dark chocolate

  • 125g butter, chopped into small cubes

  • 3 medium eggs

  • 125g caster sugar

  • 125g plain flour

  • 100g white chocolate

  • 300ml double cream

  • 50g Belgian dark chocolate

  • 50g milk chocolate

  • 20g unsalted butter

  1. Preheat the oven to 180°C/350°F/Gas Mark 4. Line the base of the cake tins with greaseproof paper and lightly grease the sides.

  2. Break up the dark chocolate and put it in a small saucepan with the butter and melt over a gentle heat. Separate the eggs and beat the egg whites with a pinch of salt and a teaspoon of caster sugar until they are stiff.

  3. In a separate bowl whisk the egg yolks with the caster sugar until pale. Fold in the flour and then gently stir in the melted chocolate mixture.

  4. Divide between the two tins then bake for 15 minutes until firm to the touch. Allow to cool then remove from the tins.

  5. Break up the white chocolate, put in a heatproof bowl and put over a pan of simmering water to melt the chocolate, making sure the base does not touch the water. Whip 200ml of the double cream

  6. When the white chocolate has melted, mix in with the whipped cream then put in the fridge to cool and set a little. When firmer, spread on the top of one of the cakes then put the other cake on top.

  7. Now melt the dark Belgian chocolate along with the unsalted butter and 50ml cream over a pan of simmering water, again making sure the bottom of the bowl does not touch the water. When melted spread over the top of the cake, this hasn’t got to be neat, some swirls are good.

  8. Then melt the milk chocolate and 50ml cream as above, when melted drizzle over the top of the dark chocolate. Allow to set then serve.

If you're decorating your cake with an Easter egg and some mini eggs, don't worry about getting expensive ones. A cheap Easter egg will still do the trick, and it'll look just as good. Plus, this recipe is so dark-chocolate-heavy, you might prefer to get a milk chocolate Easter egg to stick on top, to balance out the flavours.

When it comes to serving, however, it's a good idea to break the Easter egg up, or to take it off for slicing the cake (just make sure it's there for pictures to begin with!).

Kids can help with this recipe. Perhaps you could task them with something easy like beating the eggs? Let them have a go at doing their best decoration on top, too. They'll love drizzling the chocolate on top, and arranging the chocolate pieces and mini eggs as decoration.

Safety warning: If you're decorating this cake with Cadbury Mini Eggs, bear in mind that they can be a choking hazard, so they're not suitable for children under 4.

Variations

Don't be afraid to mix up this recipe, if you'd prefer to try it slightly differently!

You could try using different kinds of mini eggs, like some with sugar coating and some with caramel filling, etc. Whatever you can find in the shop!

In terms of the chocolate, if you're not the biggest fan of dark chocolate you could try switching it out for milk chocolate instead. Or if you want to mix things up even more, why not try using white chocolate?

When it comes to the decoration, you can design your cake however you like! It doesn't need to be an Easter egg on top - you could try it with just mini eggs or just the chocolate pieces, or something totally different! Perhaps you could leave it just with chocolate drizzled on top? Nice and simple.

Other design ideas could include an Easter Bunny theme, with either little chocolate Easter bunnies, or a bunny shape drawn with icing. Alternatively, you could take a small fluffy chick decoration and surround her with mini eggs. It's up to you! Why not ask the kids how they want to decorate the cake and let them take the lead?
