Eggless chocolate cake

  • 25g cocoa

  • 175g self-raising flour

  • ½ tsp bicarbonate of soda

  • 150ml milk

  • 50g granulated sugar

  • 25g margarine (or butter)

  • 2 tbsp golden syrup

  • icing sugar (a dusting - to serve)

  1. Mix cocoa with self-raising flour in a small bowl

  2. In a jug, dissolve the bicarb of soda in the milk

  3. In a large bowl, cream the sugar with the marg/butter and stir in 2tbsp of golden syrup

  4. Add milk and flour mixtures alternately to creamed mixture, stirring lightly until thick

  5. Put in a cake tin and cook at 180'C/Gas mark 4 for 30-40 minutes

  6. Dust with icing sugar to serve

You will need

20cm square cake tin or a 23cm round cake tin

Tips

You can use this recipe to make one big cake or lots of little muffins, whichever type of eggless cakes you prefer.

Variations

For a vanilla eggless cake, swap the cocoa powder for extra flour and add a few drops of vanilla essence. Alternative, you could use strawberry flavouring and pink colouring for a tasty and attractive strawberry eggless cake.

    Couldn't get eggs at the shops today, but I'd promised the kids we'd do some baking, so I tried this out and it turned out really well! Had it warm from the oven with ice cream - delish!

    This cake is slightly denser without the inclusion of eggs , but is still very tasty . This is an ideal recipe for our family parties as my sister in law has an egg allergy.
