Baba ghanoush

Baba ghanoush is a Lebanese dish which comprises of soft aubergine and spices – it’s a delicious alternative to hummus and works brilliantly with fresh crispy veggies. Serve as a healthy after school snack or pair with cocktails at a dinner party

  • 3 aubergines

  • 1 garlic clove, crushed

  • 1 tbsp tahini

  • 1 tsp ground cumin

  • ½ tbsp smoked paprika

  • Small handful of parsley

  • 2 tbsp olive oil

  • 1 lemon, juiced

  • Maldon smoked salt

  • Cracked black pepper

  • 1 tsp za'atar

  1. Preheat the oven to 180°C

  2. Pop the aubergines on a baking tray and drizzle with olive oil

  3. Place in the oven and roast for 45 minutes – 1 hour (depending on the size of your aubergines) until the outer skin is blackened and charred but the inside is soft and tender

  4. Allow the aubergines to cool before slicing open and scooping out the tender flesh and discarding the skins

  5. In a food processor, add the soft aubergine, garlic, olive oil, tahini, cumin, paprika, parsley and lemon juice, plus a generous pinch of Maldon smoked salt and some cracked black pepper. Blend together until the mixture is smooth

  6. Place the baba ghanoush in a bowl and drizzle with some olive oil, then top with a sprinkling of za’atar and Maldon smoked salt

  7. Serve alongside crudités or flatbreads to dip (or why not even pair with cocktails if you're hosting a dinner party?)

Tips

Serve with baby cucumber, mixed radishes, chicory, cherry tomatoes, flatbreads or crackers
