Apple and mincemeat strudel
Delicious Christmas dessert to serve with ice cream or custard

25g white breadcrumbs

100g pecans, finely chopped

50g unsalted butter, melted

4 sheets filo pastry

550g Bramley apples

400g mincemeat

Zest of 1 orange

Zest of 1 lemon

1 tsp mixed spice
-
1 tsp ground cinnamon

3 tbsp pure Canadian maple syrup

50g flaked almonds

Preheat the oven to 190°C/170°C fan/Gas Mark 5.

Mix together the breadcrumbs and chopped pecan nuts.

Brush some of the melted butter onto a layer of filo pastry and sprinkle on some of the breadcrumb and pecan mixture.

Repeat the process three times so you have four layers, one on top of the other, finishing with the breadcrumbs and nuts.

Peel and core the apples, then slice thinly.

In a bowl, add the mincemeat to the apples and mix together.

Add the orange and lemon zest and spices, and mix again.

Stir in the maple syrup until all the ingredients are combined.

Spoon the mixture down the centre of the pastry (on the top layer on top of the breadcrumbs and nuts). Leave a gap along each edge and around 7cm from each end.

Wrap into a neat oblong parcel, tucking in the edges.

Turn the parcel over so the join is on the bottom and place onto a baking tray lined with baking paper.

Brush the parcel with the remaining butter and sprinkle with flaked almonds.

Bake for 30 minutes until the pastry is golden and flaky.

Serve warm with ice cream, custard or double cream.
