  • 1 very ripe banana

  • 1 large egg

  • Coconut or vegetable oil, for frying

  1. Mash the banana in a bowl with a fork until smooth.

  2. Whisk the egg into the banana until combined.

  3. Heat a few drops of coconut oil/vegetable oil in a non-stick frying pan over a medium heat.

  4. Add a tablespoon of the banana batter to the pan and swirl with the back of the spoon to make a round pancake. Cook for 2-3 minutes, or until bubbles start to form and the pancake is coming away from the pan at the edges. Flip and cook for a further 1-2 minutes on the other side, until golden and cooked through.

  5. Remove to a plate and repeat until all the pancakes are cooked.

  6. Wait until the pancakes have cooled enough for baby to eat, then serve warm. Store leftover pancakes overnight in the fridge and serve cool the next day.

Variations

Add 2tbsp of self-raising flour and 2tbsp milk/oat milk for more traditional pancakes (once baby is ready for these ingredients)

Serve with strawberry slices and Greek yogurt or coconut yogurt for dipping

Add blended veggies to your pancake mix for a super healthy savoury alternative to sweet pancakes – go for spinach or broccoli for a fun green colour, carrots for orange, and tomatoes for red.
