Alpine eggs

An easy egg dish with spinach...

  • 2 eggs

  • 200g spinach

  • 10g butter

  • 150g mature cheddar cheese, sliced

  • Salt

  • Pepper

  • Nutmeg

  • Crusty bread (optional)

  1. Preheat oven to 220'C/Gas mark 7

  2. In a pan, melt the butter and wilt the spinach - drain and juices and season with salt and pepper to taste

  3. Place the spinach in a shallow dish, crack the 2 eggs onto the spinach and sprinkle liberally with nutmeg

  4. Cover with slices of your favourite cheese

  5. Bake in a hot oven for 5-10 minutes

  6. Serve with crusty bread

Tips

Melty chedar cheese and runny eggs make the dream combination! These Alpine eggs make a fantastic dish for breakfast, brunch, or even a light lunch.

Serve with crusty fresh bread (you could dip in the bread or opt for Alpine eggs on toast). Or for a lighter option, pair with a crisp green salad.

    I've made this the way in the recipe. But, at work we have a small omelette maker and I've made it at work with a small salad that I brought in with me and everyone thought it was amazing to be able to make something so fresh in such a short time in the office kitchen.
