Avocado pasta

A creamy, thick and rich pasta sauce, which is healthy too...

  • 300g pasta (fettuccine, spaghetti, penne, whatever you fancy)

  • 2 avocados (they must be ripe)

  • 1 tsp olive oil

  • salt (optional - to taste)

  • pepper (to taste - optional)

  • fresh basil (to serve)

  • parmesan (to serve)

  1. Fill a large pan with water and put the pasta on to boil - cook according to pack instructions

  2. While the pasta is cooking, slice the avocados in half, remove the stones and scoop the contents into a bowl, then mash

  3. Add some olive oil (just a drizzle) to make the sauce a smooth consistency

  4. You can add a sprinkle of salt and pepper if desired

  5. Once cooked, drain the pasta

  6. Now combine the pasta and the avocado sauce

  7. Sprinkle with grated parmesan and fresh basil to serve

Variations
