Alcohol free watermelon and basil mojito
A fresh tasting alternative to the traditional lime and mint mojito, this alcohol free cocktail is bursting with summer flavours

750g watermelon, chopped

10g fresh basil

2 tbsp sugar syrup

A pinch of Maldon salt

1 lime, juiced

Lime slices for garnish

Ice

In a blender, add the chopped watermelon and blitz until smooth – then pass this through a sieve to remove any pips

In two tall highball glasses, start by adding a handful of basil leaves in each, 1 tbsp sugar syrup and a pinch of Maldon salt, then muddle these together using a muddler (or similar) to break down the basil leaves and infuse the flavours

Next, add lime juice and fill the glass with ice

Top up the glass with the strained watermelon juice

Mix together and garnish with a small triangle of watermelon, a slice of lime and some basil leaves
